Cook the bacon slices in a pan without adding fat until crispy. Remove and place on paper towels. Set aside.

In the same pan, cook the beaten egg over medium-low heat to obtain a thin omelette. Season with salt and pepper. Fold the omelette in half.

Cut the panini bread in half without separating completely. Place the folded omelette, bacon slices, and cheddar slice inside.

Place the panini in a panini press or in a hot, lightly buttered pan. Grill for 4–5 minutes until the bread is golden and the cheese is melted. If using a pan, press lightly on the bread.
