    Prepare the chestnut mousse: soften the chestnut cream with a spatula in a bowl. In another very cold bowl, whip the heavy cream with powdered sugar until stiff peaks form. Gently fold the whipped cream into the chestnut cream in three additions. Add rum if desired. Refrigerate.

    Assemble the log: line a mold with plastic wrap, leaving an overhang, and place in the freezer for 5 min. Crumble the meringues. Spread a layer of vanilla ice cream (250 ml) in the bottom of the mold. Add a layer of chestnut mousse, then meringue pieces. Repeat the layers in this order.

    Freeze: cover tightly with the overhanging plastic wrap and freeze for at least 6 to 8 hours, ideally overnight.

    Unmold and decorate: take the log out 10 minutes before serving. Unmold onto a serving plate. Glaze with warmed chestnut cream and decorate with candied chestnut pieces and a dusting of powdered sugar.
