Chicken cream preparation: In a bowl, mix the crème fraîche, old-style mustard, honey (if used), pepper and chopped herbs. Incorporate the shredded or thinly sliced chicken.

Croque assembly: Spread 4 slices of bread with the chicken mixture. Sprinkle with grated Gruyère cheese, reserving some for the top. Cover with the remaining bread slices. Lightly butter the outside of the croques.
