In a hot pan without fat, cook the chorizo slices for 1-2 min until crispy. Drain on paper towel.

Preheat oven to 250-270°C with a stone or baking sheet. On a floured surface, stretch the pinsa dough into an oval shape.

Spread the caramelized onion. Arrange the chorizo (or add it at the end of cooking). Generously sprinkle with grated manchego.

Bake for 10-12 min until the crust is golden and cheese is melted. Add chorizo 2-3 min before end if desired.

Out of the oven, drizzle with honey. Sprinkle with rosemary leaves and black pepper. Slice and serve immediately.

- For maximum texture contrast, add the pre-cooked chorizo just 2-3 minutes before the end of baking.
