Preheat your oven to 200°C (390°F).

Prepare the béchamel: melt 20g of butter in a saucepan, add 1 tablespoon of flour, mix and cook for 1 minute.

Gradually pour 15cl of warm milk while stirring constantly until thickened. Salt, pepper and set aside.

Lightly spread one side of the bread slices with a little béchamel.

Place a slice of ham on two bread slices, add grated cheese on the ham (keep some for the top).

Close with the other bread slices, béchamel side inside.

Lightly butter the outside surfaces of the croques to make them golden.

Place the croques on a baking sheet lined with parchment paper.

If you kept some béchamel, spread it on top, then sprinkle with grated cheese.

Bake for about 10-15 minutes, until the top is golden brown and the cheese is melted.
