Prepare ingredients: finely chop shallot, mince garlic, clean and slice mushrooms, cut chicken into cubes.

In a skillet, heat oil and butter. Brown chicken 3-4 minutes per side, season with salt and pepper. Set aside.

In the same skillet, sauté shallot for 2 minutes, add garlic for 30 seconds, then mushrooms for 6-8 minutes until water evaporates.

Add chicken broth, deglaze and reduce by half. Stir in mustard then heavy cream. Simmer for 5 minutes.

Return chicken to the sauce and simmer 8-10 minutes over low heat, partially covered.

- For perfect browning, don't move the chicken during the first 2 minutes of cooking.
