Prepare falafels: if using dried chickpeas, soak for 12h. Drain. If canned, rinse and drain. Blend chickpeas, onion, garlic, parsley, cilantro, spices, baking soda, salt and pepper until grainy paste forms.

Shape falafels: form small compact balls with the paste so they don't fall apart during cooking.

Cooking: for frying, fry 3-4 minutes in hot oil until golden. For oven, preheat to 200°C, brush with oil and bake 20 minutes turning halfway.

Prepare yogurt sauce: mix yogurt, lemon juice, cumin or paprika, salt and pepper. Add garlic or mint if desired. Chill.

Serve: present hot falafels with yogurt sauce, accompanied by salad, raw vegetables or pita bread. Sprinkle with sesame or parsley.

- Soaking dried chickpeas: ensure sufficient soaking (12h) for proper softening.
- Storage: raw falafels can be frozen on a tray, then cooked directly from freezer in oven without thawing.
- Light crispy texture: for less fat, choose oven baking with a light brush of oil.
- Variations: add chili, harissa or curry to the paste. Replace herbs with basil or mint.
