Preheat oven to 180°C (static heat). Cut puff pastry into circles and line greased molds. Prick the bottom with a fork.

Cook bacon bits dry in a pan for 3-4 min until golden. Drain on paper towels.

Wash and chop spinach. If needed, sauté for 1 min, then let cool.

In a bowl, whisk eggs with cream, salt and pepper until smooth.

Add bacon, cheese and spinach to the mixture. Gently combine.

Divide the filling among pastry bases without overflowing. Smooth the surface.

Bake for 10 min at the bottom of the oven, then 12-15 min in the middle until top is golden. Let cool 5 min before unmolding.
