- 1
Prepare the coulis: blend the slightly thawed frozen berries with 1 tablespoon of powdered sugar and lemon juice for a thick coulis with chunks. Set aside.
- 2
In a bowl, whisk the cold mascarpone with the remaining 2 tablespoons of powdered sugar. In a large bowl, mix the softened vanilla ice cream with the mascarpone mixture until homogeneous.
- 3
Line a cake pan with plastic wrap. Pour half of the ice cream-mascarpone mixture. Add half of the coulis in drizzles and marble with a knife. Repeat the layers. Smooth the top, cover with wrap.
- 4
Freeze immediately for at least 5 to 6 hours, ideally overnight.
- 5
10 minutes before serving, unmold onto a plate. Decorate with fresh red berries, mint, and a dusting of powdered sugar.

- Thick coulis: A too-liquid coulis may freeze into a hard layer. Small fruit chunks ensure a pleasant texture.
- Cold mascarpone: If too warm, it can cause the ice cream to 'break'. Work quickly.
- Marbling effect: The goal is to create veins of coulis, not to mix everything. A knife tip or skewer works well.
- Last-minute decoration: Add fresh fruit and mint just before serving to keep them fresh and prevent frosting.
