Prepare the spinach: in a pan, sauté the garlic in 1 tbsp olive oil. Add the spinach and cook quickly until the water evaporates. Season with salt, pepper and a pinch of nutmeg. Set aside.

Preheat the oven to 220°C (convection if possible).

Spread the dough on a baking sheet or pizza stone. Spread the ricotta in a thin layer over the dough, then add the cooked spinach.

Arrange the smoked salmon slices over the spinach. Sprinkle with grated mozzarella and drizzle with a little olive oil.

Bake the pizza for 10 to 15 minutes, until the dough is golden brown and the cheese is melted.
