- 1
Preheat the oven to 180°C (fan). Unroll the shortcrust pastry and line a 24-26 cm diameter tart tin. Prick the base with a fork. Blind bake with baking paper and baking beans for 8-10 minutes, then remove them.
- 2
Let the pre-baked pastry cool slightly, then spread the old-fashioned mustard evenly over the base with the back of a spoon.
- 3
Finely crumble the well-drained tuna and distribute it evenly over the mustard.
- 4
In a large bowl, whisk the whole eggs until frothy. Incorporate the cream and milk while whisking. Season with salt and pepper.
- 5
Gently pour the creamy mixture over the tuna. Sprinkle the surface with grated cheese.
- 6
Bake in the lower part of the oven for 35 to 40 minutes, until the quiche is golden and the center is set.
- 7
Remove the quiche from the oven and let it cool on a rack for at least 10 minutes before serving.

- For a crispy crust, do not skip the blind baking step. Drain the tuna well to avoid a soggy quiche.
- Grate the cheese yourself for better melting and flavor. Place the quiche in the lower part of the oven for even cooking.
