Rice cooking: Bring a large amount of salted water to a boil. Add the rice and cook according to package instructions. Drain thoroughly and set aside.
- 2
Filling preparation: Finely slice the onion and chop the garlic. In a pan, heat the olive oil and sauté the onion and garlic until they become tender and lightly golden. In a large bowl, flake the drained tuna. Add the onion/garlic mixture, cooked rice, sliced black olives, beaten eggs, cream, chopped parsley and half of the grated cheese. Season with salt and pepper and mix well until you get a homogeneous preparation.

Assembly and cooking: Preheat the oven to 190°C (convection). Pour the preparation into a lightly oiled gratin dish. Sprinkle the remaining grated cheese over the entire surface. Bake for 25 to 30 minutes, until the top is golden brown and the preparation is set.

- Vegetable variations: Add diced peppers, corn or zucchini for a more complete dish
- Creamy version: For a creamier version, incorporate 1 to 2 portions of spreadable cheese like St Môret
- Consistency: Drain the tuna and rice well to avoid a too moist gratin
- Customization: Replace black olives with green ones or add capers
- Serving tips: Serve this gratin hot accompanied by a vinaigrette green salad or fresh tomatoes. Some fresh chopped herbs (chives, parsley) enhance the freshness of the dish.
