    Prepare the filling: if the chicken is not cooked, cook and shred it. In a pan, heat the oil and butter, add the chicken, garlic, paprika, salt and pepper. Off the heat, add the basil. Let cool for 10 minutes.

    Add the grated mozzarella to the warm chicken mixture and mix well. Set aside.

    Preheat the oven to 200°C. Unroll the pastry on a floured surface. Cut a central strip 8 cm wide. On the side strips, make oblique cuts to create strips.

    Spread the filling on the central strip. Fold the top and bottom edges of the central strip over the filling. Braid the strips, alternating left and right.

    Brush the pastry with beaten egg, sprinkle with sesame seeds or herbs. Bake on a hot baking sheet for 25 to 30 minutes.

    Let rest for 5 to 10 minutes before cutting into thick slices. Serve warm.

Tips & Tricks
  • Cooling the filling: Essential to prevent heat from softening the dough, making braiding difficult.
  • Dry mozzarella: Use a "pizza type" mozzarella or drain a fresh ball. Too wet mozzarella would soak the dough.
  • Braiding: Work quickly so the dough stays cold. If it softens, place the filled (unbraided) pastry in the fridge for 10 minutes before braiding.
  • Hot baking sheet: This trick ensures instant cooking start for a perfectly crispy bottom.
