Activate the yeast: In a bowl, mix warm milk, yeast, and 1 teaspoon of sugar. Let rest for 10 min until frothy.
- 2
Mix ingredients: In a large bowl, add flour, remaining sugar, salt, eggs, and the activated yeast mixture. Mix until a homogeneous dough forms.
- 3
Incorporate butter: Add soft butter little by little while kneading for 8-10 min, until smooth and pliable.
- 4
Add chocolate chips: Gently incorporate the chocolate chips, distributing them evenly.
- 5
Let rise: Cover and let rise for 1h30 in a warm place, until doubled in size.
- 6
Divide the dough: Punch down the dough, divide into 3 equal portions, and shape each into a log.
- 7
Braid the brioche: Braid the 3 strands together. Place the braided brioche in a buttered loaf pan or on a baking sheet with parchment paper.
- 8
Let rest again: Cover and let rise for another 30 min.
- 9
Glaze the brioche: Preheat oven to 180°C. Brush the brioche with a mixture of egg yolk and milk.
- 10
Bake: Bake for 22-25 min until golden brown and hollow when tapped. For extra softness, place a bowl of water in the oven.
- 11
Cool: Let cool on a wire rack before slicing.

- If the dough is too sticky, lightly oil your hands instead of adding flour for a lighter brioche.
- Variation: replace chocolate chips with raisins, pink pralines, spreadable chocolate, or orange zest.
- For an even softer brioche, place a small bowl of water in the oven during baking to create steam.
