Prepare ingredients: mince garlic, peel and chop carrots, prepare onions. Season the beef shank.

Sear the meat: brown the shank in hot oil in a Dutch oven, 8-10 min. Set aside.

Deglaze the pot with red wine, scraping up browned bits. Reduce for 2-3 min.
