Roll out the shortcrust pastry on a floured surface. Cut out circles with a cutter or glass and place them in tartlet molds. Prick the bottom with a fork.

In a bowl, whisk the eggs. Add the heavy cream in a thin stream while continuing to whisk to obtain a smooth mixture.

Incorporate the grated cheese into the mixture and mix to distribute it evenly.
