Roll out the shortcrust pastry on a floured surface. Cut out circles with a cutter or glass and place them in tartlet molds. Prick the bottom with a fork.

In a bowl, whisk the eggs. Add the heavy cream in a thin stream while continuing to whisk to obtain a smooth mixture.

Incorporate the grated cheese into the mixture and mix to distribute it evenly.

Chop the chives and add them to the mixture with salt and pepper. Taste and adjust seasoning if needed.
