Preheat the oven to 220°C (convection). Spread the frozen waffle fries on a baking sheet with parchment paper and bake for 15-20 min until crispy and golden.

In a large oven-safe skillet, heat olive oil over medium-high heat. Add the sliced steak, garlic salt, and pepper. Sauté for 3-4 min until browned. Remove the steak and set aside. Keep 1 tbsp of the cooking juices.

In the same skillet, add the reserved juices, onion, and bell pepper. Sauté for 5-7 min until onions are tender. Remove and set aside with the steak.

In the skillet (or a baking dish), place a layer of fries. Top with 4 slices of cheese, then half of the steak and vegetables. Repeat with remaining fries, steak/vegetables, and finish with the rest of the cheese.

Bake for 5-8 min until the cheese is perfectly melted. For more browning, broil for 1-2 min. Serve immediately, hot and melty.

- For a spicy version, add fresh or pickled jalapeño slices during assembly.
- Tex-Mex variation: replace waffle fries with nachos for a Philly cheese steak nachos.
- Cheese blend: use a combo of cheddar, mozzarella, and raclette cheese for more depth of flavor.
