Cheesy Meatloaf, Tender & Flavorful
Dive into a comforting classic: this tender meatloaf, generously topped with melted cheddar, is a true call to indulgence. Its simple and quick preparation makes it an ideal family dish for weeknight dinners or Sunday meals. Accompanied by a smooth beef broth-based sauce, each bite is an explosion of flavors. The ground beef is infused with the aromas of sautéed onions and garlic, then bound with egg, breadcrumbs, and milk for a perfect texture. The ketchup on top adds a sweet and caramelized touch, while the melting cheddar crowns it all. Let it rest before slicing for neat and juicy portions. In short, a complete, balanced, and comforting dish that will delight young and old alike. For a lighter version, replace the meat with turkey or a beef-pork mix, or opt for a vegetarian version with lentils. In any case, this cheesy meatloaf will remain a staple in your kitchen.

- 1
Heat the olive oil in a pan over medium heat. Add the chopped onion and garlic, and sauté until tender and translucent (about 5 minutes). Set aside and let cool slightly.
- 2
In a large bowl, mix the ground beef, egg, milk, breadcrumbs, 100g of grated cheddar, salt, pepper, and smoked paprika. Add the cooked onion and garlic, then mix well until homogeneous.
- 3
Shape the mixture into a meatloaf about 3 cm thick on a baking sheet or in a loaf pan. Brush the top evenly with ketchup.
- 4
Preheat your oven to 180°C. Bake the meatloaf for 45-60 minutes, until the center is cooked through (check with a thermometer: internal temperature should reach about 70°C) and the edges are golden.
- 5
Remove the meatloaf from the oven and sprinkle the remaining 100g of grated cheddar on top. Return to the oven for 5-7 minutes, until the cheese is melted and slightly golden.
- 6
During baking, reheat the beef broth in a small saucepan. Deglaze the cooking juices from the pan with 2-3 tablespoons of broth, then add this mixture to the remaining broth. Let it thicken slightly over low heat to obtain a smooth sauce.
- 7
Let the meatloaf rest for 10 minutes before slicing. Serve hot, topped with the sauce and garnished with fresh chopped parsley.

- To prevent the cheese from sinking after baking, let the meatloaf rest for 10 minutes before slicing. This allows the juices to redistribute and makes the slices neater.
- Replace the beef with ground turkey or a beef/pork mix for a lighter version.
- Replace the meat with plant-based proteins such as cooked lentils or finely chopped mushrooms, and use vegetable broth for the sauce.
- Use a cooking thermometer to check that the internal temperature reaches 70°C, ensuring perfect and safe cooking.
