Heat the olive oil in a pan over medium heat. Add the chopped onion and garlic, and sauté until tender and translucent (about 5 minutes). Set aside and let cool slightly.

In a large bowl, mix the ground beef, egg, milk, breadcrumbs, 100g of grated cheddar, salt, pepper, and smoked paprika. Add the cooked onion and garlic, then mix well until homogeneous.

Shape the mixture into a meatloaf about 3 cm thick on a baking sheet or in a loaf pan. Brush the top evenly with ketchup.

Preheat your oven to 180°C. Bake the meatloaf for 45-60 minutes, until the center is cooked through (check with a thermometer: internal temperature should reach about 70°C) and the edges are golden.
