    In a dry pan, cook the bacon bits over medium heat for 4-5 min until golden. Drain thoroughly on paper towels.

    Preheat the oven to 180°C (fan). In a bowl, whisk the eggs until frothy. Incorporate the cream while whisking.

    Add the flour or cornstarch, a pinch of nutmeg, and pepper. Whisk until smooth.

    Fold in the drained bacon and grated Comté. Mix gently with a spatula. Do not add salt.

    Generously butter 8 to 10 cavities of a muffin tin. Fill them 3/4 full with the mixture.

    Optional: place a cherry tomato half on each flan, cut side up.

    Bake in the middle of the oven for 20-25 min. The flans are ready when golden and a knife inserted in the center comes out clean.

    Let cool for 5 min, then run a thin knife around each flan before unmolding onto a rack. Serve warm or cold.

  • Drain the bacon well to avoid greasy and heavy flans.
  • Cornstarch gives a silkier texture than flour.
  • Do not fill the molds to the brim to prevent overflow during baking.
  • A 5-minute rest in the mold makes unmolding easier.
  • For a vegetarian version, replace bacon with grilled pepper cubes and double the Comté.
