- 1
Preheat the oven to 200°C (convection if possible). Take the puff pastry out 5 min beforehand. Line a baking tray with parchment paper.
- 2
Unroll the pastry. Evenly spread the chopped chocolate, crushed hazelnuts, sugar, and a pinch of salt. Press lightly to adhere.
- 3
Fold the pastry in half lengthwise to seal the filling. Cut into 2 cm wide strips. Twist each strip 4-5 times to form a twist and place on the tray.
- 4
Beat the egg yolk with the milk. Brush each twist with this mixture. Bake for 15-20 min until golden and crispy.
- 5
Let cool for 5-10 min on a wire rack. Dust with powdered sugar before serving for a final sweet touch.

- Chop your own chocolate for irregular, more flavorful melting pieces. For more aroma, toast the hazelnuts in a dry pan for 5 min before crushing. Don't force the twisting to avoid tearing the pastry. Ensure thorough baking to maintain crispiness.
- Variations: White chocolate with cranberries; crushed speculoos with melted butter; spread praline; or orange zest mixed with sugar.
- Serve warm with coffee, tea, or as a dessert with a scoop of vanilla ice cream or raspberry coulis.
