In a small bowl, pour the warm milk. Sprinkle the yeast over it and mix lightly. Let rest for 10 minutes in a warm place until a foamy layer forms.

In a large bowl, sift the flour. Add the sugar and salt and mix. Make a well, pour in the milk-yeast mixture, add the eggs, and incorporate the orange blossom water.

Transfer the dough to a floured surface. Knead for 5 minutes. Incorporate the melted butter little by little, kneading for another 5-7 minutes until you get a smooth, non-sticky dough.

Form a ball, lightly oil a bowl, place the dough in it, and cover. Let rise for 1 to 1.5 hours in a warm place until doubled in size.

Punch down the dough. Roll it out to 1.5 cm thickness. Cut out circles with a cutter. Sprinkle one side with pearl sugar and press lightly. Place on a floured tray.

Cover the donuts and let rise for 20 minutes in a warm place.

In a saucepan, heat the oil to 170-175°C. Fry the donuts for 2-3 minutes on each side until golden. Drain on paper towels.

Let cool slightly for a few minutes. Dust with sifted powdered sugar just before serving.

- Milk temperature: Crucial. Too hot, it kills the yeast; too cold, it won't activate it.
- Kneading: It develops the gluten and gives the soft, airy texture. Don't skip it.
- Pearl sugar: It resists frying and partially melts, creating a delicious caramelized glaze. Don't omit it.
- Oil temperature: The key to success. Too hot, the donuts burn on the outside; too cold, they absorb oil.
- Do not cover after frying: Steam will soften them.
