Activate the yeast by mixing it with warm milk. Let rest for 10 min until foam appears.

In a bowl, sift the flour, add sugar and salt. Make a well, pour in the milk/yeast mixture, eggs, and fresh cream. Mix.

Knead the dough for 5 min on a floured surface. Incorporate the melted butter little by little while kneading for another 5-7 min until smooth and elastic.

Form a ball, place it in an oiled bowl, cover with a damp cloth and let rise for 1h to 1h30 in a warm place until doubled in size.

Punch down the dough, take 30g portions. Shape into balls, flatten into oval discs 1.5 cm thick. Place on a floured tray.

Cover the doughnuts with a cloth and let rise for 20 min in a warm place.

Heat oil to 170-175°C. Fry the doughnuts in batches of 4-5 for 2-3 min per side until golden. Drain on paper towels.
