Wash the potatoes without peeling, dry them well. Cut them into 1 cm thick rounds.

In a bowl, mix the rounds with olive oil, salt and pepper to coat them well.

Preheat the oven to 200°C. Arrange the rounds in a single layer on a baking sheet with parchment paper.

Bake for 35-40 min. Flip halfway through for even browning. Optional grill for 3-5 min for extra crispiness.
