Wash the potatoes without peeling, dry them well. Cut them into 1 cm thick rounds.
- 2
In a bowl, mix the rounds with olive oil, salt and pepper to coat them well.
- 3
Add the grated Parmesan and mix gently so it adheres to the rounds.
- 4
Preheat the oven to 200°C. Arrange the rounds in a single layer on a baking sheet with parchment paper.
- 5
Bake for 35-40 min. Flip halfway through for even browning. Optional grill for 3-5 min for extra crispiness.
- 6
Out of the oven, sprinkle with chopped parsley. Let rest for 2 min before serving.

- For perfectly even rounds, use a mandoline. Dry the potatoes well after washing to ensure crispiness.
- Serve with dips: homemade mayonnaise, yogurt sauce or cream cheese. Present them in a paper cone for an appetizer effect.
- Variations: try with other cheeses (comté, pecorino), add herbs (thyme, rosemary) or a touch of spices (paprika, curry).
