Preheat your oven to 190°C (375°F) using conventional heat.

Take the chicken out of the fridge 20 min before. Season the inside and outside with salt and pepper. Insert 2 crushed garlic cloves and some thyme inside.

Rub the chicken all over the skin with the softened butter. Add a drizzle of olive oil and sprinkle with thyme.

Wash the potatoes. Cut them if necessary. Mix them with olive oil, salt, pepper, and the remaining crushed garlic cloves.

Place the chicken in the center of an oven-safe dish. Arrange the potatoes around it.

Bake for 1 hour and 20 minutes. Baste the chicken and potatoes regularly with the cooking juices every 20 minutes.

For the last 10 minutes, increase the temperature to 210°C (410°F) to crisp up the skin.
