    Assemble the galette: in a large oiled pan, spread half of the potato mixture in an even layer. Distribute the meat filling leaving 2-3 cm on the edges. Cover with the remaining potatoes, pressing lightly.

    Cook: cover and cook over medium-low heat for 15 minutes. Carefully flip the galette using a plate and continue cooking for 10 minutes uncovered until golden brown on both sides.
