Prepare the zucchini: wash and grate finely. Place in a cloth with half the salt, let drain 5 min, then wring out strongly to remove water.

Finely chop the parsley, dill and mint. Reserve the mint and part of the dill for the sauce.

In a bowl, mix the drained zucchini, eggs, flour, parmesan, parsley, dill (except reserved part), remaining salt and pepper until you get a homogeneous batter.

Prepare the sauce: in a bowl, mix yogurt, mint, reserved dill, lemon juice, salt and pepper. Whisk, taste and refrigerate.

Heat oil in a pan over medium heat. Drop spoonfuls of batter, flatten slightly. Cook 3-4 min per side until golden and crispy. Drain on paper towels.

Serve fritters hot with the yogurt-mint sauce and lemon wedges.

- Thoroughly wringing out the zucchini is key for crispy, non-greasy fritters.
- Keep oil at medium heat to cook through without burning.
- Do not overcrowd the pan to avoid temperature drop.
- If batter is too runny, add 1 tbsp flour. If too thick, a dash of milk.
