Prepare the aromatics: finely chop the shallot, mince the garlic, chop the parsley, and drain the shrimp.

In a pan, melt the butter. Sweat the shallot for 2 min. Add the garlic and paprika, cook for 30 sec. Increase heat, add shrimp and sauté for 1-2 min.

Reduce heat, pour in cream and lemon juice. Simmer for 2-3 min until slightly thickened. Off heat, stir in parsley, season with salt and pepper, let cool for 10 min.

Preheat oven to 200°C. Unroll pastry on parchment paper. Place filling in center, leaving a 3 cm border. Shape (foldover, pie, or turnover) and seal edges well.

Beat egg yolk with milk. Brush pastry. Make 3-4 small slits in the center.

Bake for 20-25 min until golden. Let cool on a rack for 5 min before serving.
