Toasting the nuts (optional but recommended): In a dry pan, toast the crushed walnuts and almonds over medium heat for 3-4 minutes, stirring constantly, until lightly colored. Transfer to a plate to cool. Set aside.
- 2
Preparing the flavored cheese mixture: In a bowl, vigorously mix the fresh and goat cheeses until smooth. Add chives, parsley, garlic, honey, salt, and pepper. Mix. Gently fold in the chopped cranberries.
- 3
Shaping the balls: Place the bowl in the refrigerator for 10 min. Moisten hands, take portions (30g) and roll into smooth balls. Place them on a plate.
- 4
Generous coating with nut mixture: On a plate, mix the toasted walnuts and almonds. Roll each ball in the mixture, pressing lightly for adherence.
- 5
Final rest and setting: Place the coated balls on a tray, cover with plastic wrap and refrigerate for at least 20 minutes (ideally 30) to firm up.
- 6
Final touch and serving: When ready to serve, sprinkle with a pinch of fleur de sel and decorate with fresh herbs. Serve with crackers, apple slices or cucumber sticks.

- Take the cheeses out of the refrigerator 10 minutes before to make them pliable.
- For very hard cranberries, soak them in warm water for 5 minutes before chopping.
- Always keep your hands moist to shape perfect balls without the cheese sticking.
- For a more generous coating, lightly press the nut mixture onto the balls.
- Serve with a dry white wine (Sauvignon Blanc) or brut champagne. Try the bacon-maple, pistachio-lemon or blue-cheese-pear variations.
