
Golden Roast Chicken with Potatoes and Herbs

Preheat the oven to 200°C (convection). Place the rack in the center of the oven.

Salt and pepper generously inside and outside the chicken. Insert 2 garlic cloves and some thyme and rosemary sprigs. Mix softened butter with a spoon of olive oil and carefully brush the skin.

Wash and brush the potatoes (keep the skin). Cut them in half if necessary. Arrange them around the chicken in a large baking dish. Add the remaining garlic and herbs, drizzle with olive oil, salt and pepper.

Bake for 1 hour 15 minutes. Baste the chicken and potatoes with cooking juices every 20 minutes. Cover with aluminum if browning too quickly.

Let the chicken rest for 10 minutes before carving. Serve with potatoes and drizzle with cooking juices.
