    Preheat oven to 180°C (convection). Line a baking sheet with parchment paper. Chop white chocolate into chunks. Optional: soak cranberries in hot water for 5 min, then drain and dry.

    In a bowl, beat softened butter, brown sugar, and white sugar for 2-3 min until mixture lightens and is creamy.

    Add the egg and beat for 1-2 min until fully incorporated and smooth.

    In another bowl, mix flour, baking powder, and salt. Add to wet ingredients and fold gently with a spatula until no flour remains.

    Add cranberries (drained) and most of the white chocolate chunks (reserve some). Mix to distribute.

    Shape into 10 dough balls (about 50-55g). Place on baking sheet, spacing 5 cm apart. Press reserved chunks on top.

    Bake for 10-11 min. Edges should be golden and firm, center still slightly soft.

    Let rest on hot baking sheet for 5 min. Then transfer to a wire rack to cool completely.

Tips & Tricks
  • Softened butter, not melted: it should be malleable at room temperature to prevent cookies from spreading too much.
  • For a soft center: remove cookies from oven when center still looks slightly undercooked, they will finish cooking on the hot baking sheet.
  • For identical cookies: use a scale to weigh each dough ball.
  • Bake one sheet at a time for even heat.
