
Gratinated Oysters with Butter, Breadcrumbs & Parsley

Preparation is quick (30 minutes) but requires a little attention for shucking the oysters. Start by carefully opening 6 hollow oysters. Prepare a flavored butter with garlic, lemon, salt, and pepper. Finely chop fresh parsley and mix half of it with breadcrumbs. Place a generous knob of butter on each oyster, then top with the breadcrumb mixture. Broil for 6 to 8 minutes in a 220°C oven until the top is golden brown. Sprinkle with the remaining parsley and serve immediately with lemon wedges. Carefully open the oysters using a suitable knife, taking care to detach the flesh without damaging it. Remove excess water from each shell.

In a bowl, mix the softened butter with the finely chopped garlic, lemon juice, a pinch of salt and pepper until a homogeneous and fragrant texture is obtained.

Wash, dry and finely chop the fresh parsley.

In a small bowl, mix the fine breadcrumbs with half of the chopped parsley to prepare the crispy topping.

On each opened oyster, place a generous knob of flavored butter, then evenly distribute the parsley breadcrumbs.

- For easier oyster shucking, use a cloth to protect your hand and an oyster knife. Coarse salt on the baking sheet helps keep the shells stable during cooking. Serve immediately after removing from the oven to enjoy the crispiness.
- For an even more gourmet version, add a little grated cheese (parmesan or comté) to the breadcrumbs. You can replace the parsley with chives or chervil. For a spicy note, incorporate a touch of Espelette pepper into the butter.
