Ingredient preparation: wash and dry the cherry tomatoes, then cut them in half. Drain the mozzarella and cut into small pieces if necessary. Finely chop the fresh basil leaves.

Mixture preparation: in a large bowl, beat the eggs with the liquid cream until you get a homogeneous and frothy mixture. Incorporate the grated parmesan (if used), salt and pepper to taste.

Filling: lightly oil 12 cavities of a muffin tin. Evenly distribute the halved cherry tomatoes and mozzarella pieces at the bottom of each cavity.

Molding and baking: preheat the oven to 180°C. Gently pour the quiche mixture over the filling, filling each cavity 3/4 full. Bake for 20-25 minutes until the mini quiches are well risen and nicely golden.

Unmolding and finishing: let cool for 5 minutes before carefully unmolding. Generously sprinkle with chopped fresh basil just before serving.
