Preheat the oven to 200°C. Line a baking sheet with parchment paper. Take the puff pastry out of the fridge.

Unroll the pastry. Spread the mustard evenly. Distribute the bacon (and cheese if used). Pepper.

Fold the pastry lengthwise. Lightly flatten with a rolling pin. Cut into 1.5-2 cm wide strips.

Twist each strip 3-4 times to form a twist. Place on the baking sheet, spacing them apart.

Mix the egg yolk with milk. Brush the twists. Sprinkle with seeds if desired.

Bake for 15-20 minutes until golden and crispy. Let cool on a rack for 5 minutes before serving.

- Use a good quality butter puff pastry for best results.
- For lardons, pre-sear them in a pan and drain well.
- Don't twist the strips too tightly, leave room to puff up.
- Bake in the middle of the oven for even color.
- Serve with a dip (Greek yogurt, mustard, dill) to balance flavors.
