    In a large bowl, mix the oat flakes, flour, baking powder, sugar (if used) and a pinch of salt.

    Add the yogurt, egg, oil (or melted butter) and milk to the dry mixture. Mix well until you obtain a homogeneous and slightly thick dough. If the dough seems too dry, add a little extra milk, one tablespoon at a time.

    Preheat your oven to 180°C (350°F). Lightly butter or oil a loaf pan, or line it with parchment paper for easy unmolding.

    Pour the batter into the loaf pan and smooth the surface with a spatula. Bake for 40–45 minutes, until the bread is golden brown and a knife inserted in the center comes out clean.

    Take the bread out of the oven and let it cool in the pan for 10 minutes before unmolding onto a rack. Enjoy warm or at room temperature.

  • For an even more nutritious bread, replace part of the flour with whole wheat or wholemeal flour. You can also add chia seeds, flax seeds or nuts for extra crunch.
  • Sweet variation: Add chocolate chips, raisins or a honey glaze for a more indulgent version.
  • Savory variation: Omit the sugar and add dried herbs (thyme, rosemary) or grated cheese for a savory bread perfect to accompany soups or salads.
