Preheat the oven to 180°C. Melt the chocolate and butter in a double boiler or in the microwave in short bursts. Mix until you get a smooth and shiny mixture.

Off the heat, add the sugar and mix. Incorporate the eggs one by one, whisking vigorously after each addition. Add the pistachio paste and mix until homogeneous.

Incorporate the flour and pinch of salt by mixing gently. Finally add the crushed pistachios, reserving a tablespoon for decoration.

Pour the batter into a 20cm square mold previously buttered or lined with parchment paper. Bake for 20-25 minutes. The brownie is cooked when the crust is cracked but the center remains slightly wobbly.
