Prepare the salmon: Cut the fresh salmon into small pieces, then coarsely blend. Cut the smoked salmon into small dice.

Mix the preparation: In a bowl, mix both salmons, cream, eggs, shallot, lemon zest and a dash of juice, chopped herbs. Lightly salt and generously pepper.

Cooking: Preheat oven to 160°C. Line a loaf pan with parchment paper, pour in the mixture and smooth. Bake in a water bath for 40-50 min. Let cool.

Finishing and serving: Refrigerate for at least 4h (ideally overnight). Unmold, sprinkle with pink peppercorns if desired, and slice. Serve cold with a lemon cream or mayonnaise sauce, and toasts.

- For a visual effect, layer a thin sheet of smoked salmon in the center of the terrine before baking.
- Replace dill with cilantro or basil to vary the flavors.
- Add a layer of fresh cheese like Philadelphia for a creamier texture.
