Preheat the oven to 220°C (425°F). Roll out the floured pizza dough into a 30-32 cm circle and place it on a baking sheet with parchment paper.
- 2
Remove the sausage meat from the casings. Sauté the minced garlic for 30 seconds in a little oil. Add the sausage meat and cook for 5-7 minutes, crumbling it until golden brown. Drain and set aside.
- 3
In the same pan, sauté the sliced mushrooms over high heat for 4-5 minutes until golden. Season with salt and pepper.
- 4
Spread the tomato sauce over the dough, leaving a border. Distribute the sausage and mushrooms. Sprinkle with mozzarella, herbs, and pepper.
- 5
Bake for 12-15 minutes until the crust is golden and the cheese is melted. Let rest for 2 minutes before slicing and garnishing with basil, parmesan, and a drizzle of olive oil.

- Drain the cooked sausage well to avoid a greasy pizza.
- Cooking the mushrooms over high heat allows them to caramelize without releasing too much water.
- Drain and dry fresh mozzarella balls to avoid excess moisture.
- A pizza stone gives a crispier crust, like in a wood-fired oven.
