    Preheat the oven to 180°C (350°F). In a large bowl, mix the flour, baking powder, one teaspoon of salt and half a teaspoon of pepper. Make a well and break the eggs into it.

    Start mixing while gradually incorporating the milk and olive oil. Whisk vigorously until you get a smooth and homogeneous batter.

    Add to the batter the mozzarella cubes (well drained), chorizo cubes and grated emmental. Mix gently with a spatula for even distribution.

    Pour the preparation into a previously buttered and floured cake pan. Smooth the surface and generously sprinkle with grated cheddar. Place a few chorizo slices for decoration.

    Bake for 35 to 40 minutes until the cake is golden brown and a knife inserted in the center comes out clean.
