    Clean the mushrooms and slice them thinly. In a hot pan with olive oil, sauté them over high heat for 5-6 min until the water evaporates. Add the chopped garlic at the end, season with salt and pepper. Reserve a few pieces for garnish.

    In a bowl, whisk the eggs. Incorporate the cream and milk. Add the Parmesan, chives, a pinch of nutmeg (if using), salt, and pepper. Whisk until smooth. Stir in the sautéed mushrooms (except the reserved ones).

    For an ultra-smooth texture, briefly blend the mixture with an immersion blender (optional).

    Preheat the oven to 160°C (convection). Butter 6 individual molds. Pour in the mixture, straining through a sieve if needed. Do not fill beyond 3/4.

    Place the molds in a deep baking dish. Pour boiling water halfway up the molds. Bake for 25-30 min. The flan should be set around the edges and slightly wobbly in the center.

    Remove the molds from the water bath and let cool on a rack for 10 min. Run a thin knife around the edge and carefully unmold onto a plate.
