    Prepare the choux pastry: heat water, butter and salt until boiling. Off the heat, add flour all at once and mix vigorously until a ball forms. Dry the dough 1-2 minutes on low heat. Let cool 5 minutes, then incorporate eggs one by one until smooth and shiny.

    Shape and bake: preheat oven to 180°C. Pipe dough mounds onto a baking sheet. Bake 25-30 minutes without opening the oven for the first 20 minutes. Cool on a rack.

    Prepare strawberries: wash, dry and cut strawberries into pieces. Lightly sugar if needed and let rest 10 minutes.

    Prepare chantilly: whip very cold cream. Add powdered sugar and vanilla once thickened. Whip until firm but smooth peaks form. Refrigerate.

    Assemble: cut choux in half and fill with chantilly and strawberries, or pierce the bottom and pipe chantilly inside. Decorate with a whole strawberry and powdered sugar.
