Preheat the oven to 180°C (conventional heat). Place paper liners in a muffin tin or lightly grease the cups.

Peel the apples and cut them into small, even cubes. Set aside.

In a bowl, mix the eggs, milk and melted butter until smooth.

In another bowl, mix the flour, sugar, cinnamon and baking powder.

Gradually incorporate the dry ingredients into the wet mixture. Mix gently until just combined (do not overmix).

Add the apple cubes to the batter and fold gently to distribute.

Using a spoon, fill the cups two-thirds full. Bake for 25 minutes. Check doneness with a knife tip. Let cool before removing from the tin.

- For even moister muffins, use apples like Gala or Golden. You can add a handful of crushed nuts or chocolate chips. Serve warm with a little powdered sugar sprinkled on top.
- Store in an airtight container at room temperature for 3-4 days. To reheat, 10 seconds in the microwave is enough.
- Gourmet variations: Sprinkle with sliced almonds before baking, add raisins, drizzle with salted butter caramel or add a pinch of nutmeg.
