
Beef Burger with Rocket, Grilled Courgette & Spicy Green Sauce

Peel and finely slice the red onion. In a bowl, mix hot water, salt and sugar until dissolved. Add lemon juice and onions. Marinate for 15-20 min.

Chop the parsley and coriander. Grate the garlic. In a bowl, mix mayonnaise and yogurt. Add herbs, garlic, lemon juice, salt and chilli flakes. Mix and refrigerate.

Cut the courgette into thick slices. Brush with oil, salt, pepper. Grill for 2-3 min per side in a very hot pan. Set aside.

Rinse and spin-dry the rocket. Set aside.

In a very hot pan, cook the steaks without moving them for the first 2 min on each side. Season with salt and pepper. Rest for 2 min.

Cut the buns in half and toast the inner side for 1-2 min in a pan or oven. Optional: sprinkle coarse salt on top.

On the bun base, spread green sauce. Add rocket, steak, 2 courgette slices, pickled onions and more sauce. Close and serve.

- Prepare pickled onions and green sauce in advance (up to 24h).
- For a vegetarian version, replace beef with lentil or chickpea patties.
- For a perfect crust on the steak, use a very hot pan and do not move the meat for the first 2 minutes.
- Replace courgette with aubergine for a smokier version.
