Mash the cooked cauliflower into a fine puree. In a bowl, mix the flour, baking powder, parmesan and seasonings.

Add the cauliflower puree, egg and olive oil. Mix until you get a slightly sticky homogeneous dough.

Preheat the oven to 180°C. Form thin sticks 10-12 cm long on a baking sheet with parchment paper. Sprinkle with seeds if desired.

Bake for 15-20 minutes until the breadsticks are golden and crispy. Let cool on a rack.

- Drain the cooked cauliflower well to avoid too wet dough
- The dough should be flexible but not too sticky
