Preheat oven to 200°C. Cut 12 circles from each puff pastry sheet. With the second sheet, cut out the center of the circles to form rings. Prepare the egg wash by beating the egg yolk with milk.

Brush the edges of the pastry circles with egg wash. Place a ring on top of each circle, pressing to seal. Brush the top of the rings without touching the sides.

Cut the ham and cheese into pieces. Place a piece of ham then cheese into each cavity. Lightly pepper.

Refrigerate for 10 minutes for better puffing. Bake for 15 to 18 minutes until puffed, golden and the cheese is melted.

Remove from oven, sprinkle with fresh thyme and let cool 2-3 minutes before serving.

- Puff pastry: Use an all-butter pastry and take it out of the fridge at the last moment for optimal flakiness.
- Attaching rings: The egg wash acts as glue, a light brush is enough.
- Egg wash: Avoid brushing the vertical sides to allow steam to lift the pastry and create distinct layers.
- Cheese: Choose a cheese that melts well like raclette or emmental. Mozzarella can release water.
