    In a bowl, work the soft butter until creamy. Add the grated cheddar and mix vigorously. Incorporate the egg and mix until smooth.

    In another bowl, sift together the flour, paprika, herbs, salt, and pepper. Add this dry mixture to the butter-cheese mixture. Mix with a spatula then knead briefly to form a homogeneous dough ball.

    Preheat the oven to 180°C (356°F). Fill a cookie press with the dough. Form flowers or rosettes on a baking sheet lined with parchment paper, spacing them 2-3 cm apart. Optionally sprinkle with sesame seeds.

    Bake for 12 to 15 minutes until the edges are lightly golden. For extra crispness, leave the oven door ajar for the last 2 minutes.

    Let cool on the sheet for 5 minutes then transfer carefully to a wire rack. Sprinkle with flaky salt if desired while still warm.

Tips & Tricks
  • Butter must be very soft, at room temperature for at least 1 hour, for an easy-to-press dough.
  • Grate the cheese yourself very finely for better melting. Pre-grated cheese is often too dry.
  • Use a cookie press with a simple design plate (flower, star) for best results. Lightly grease the inside if the dough sticks.
  • Watch the baking from 10 minutes, the cookies brown quickly. They are ready when the edges are golden but the top is still pale.
