- 1
Preheat the oven to 200°C (convection if possible). Line a large baking sheet with parchment paper. Unroll the pizza dough and cut into 3x3 cm squares.
- 2
In a bowl, mix the mozzarella, cheddar, and 30g of parmesan. Add the chopped garlic, half the parsley, oregano, and pepper.
- 3
Place a teaspoon of the mixture in the center of a dough square. Fold the 4 corners to the center and pinch well to form a sealed ball.
- 4
Assemble the balls on the sheet in the shape of a tree: start with a base of 8-9 balls, then stack rows reducing by one ball each time.
- 5
Mix the melted butter with the additional garlic. Brush all the balls. Place a ramekin of water at the bottom of the oven and bake for 18-22 minutes until golden.
- 6
Remove from the oven, sprinkle with the remaining parmesan and parsley. Decorate with rosemary. Let cool for 5 minutes before serving.

- Sealing edges: Pinch the edges well to prevent the cheese from escaping during baking.
- Spacing: The balls should touch lightly to form a uniform tree, without being crushed.
- Cheese: Use dry mozzarella (pizza type) to avoid soggy dough.
- Steam: The ramekin of water ensures a soft center and prevents drying out.
- Serve warm with dipping sauces (marinara, aioli, ranch) and toothpicks. Pair with a crisp white wine or a light blonde beer.
- Ham: Add 50g of diced cooked ham.
- Chili: Incorporate ½ tsp of chili flakes or smoked paprika.
- Goat Cheese and Honey: Replace half the cheddar with fresh goat cheese and brush with honey after baking.
