Preheat the oven to 180°C. Line a baking sheet with parchment paper.

Separate the egg whites from the yolks. Whisk the yolks with the sugar until the mixture turns pale.

Gently fold the sifted flour into the yolk-sugar mixture.

Whip the egg whites with a pinch of salt until stiff peaks form, then gently fold them into the batter using a spatula.

Spread the batter evenly on the tray and bake for 12-15 minutes, until golden and springy to the touch.

Meanwhile, prepare the cream. Melt the white chocolate in a double boiler. Whip the heavy cream until stiff peaks form.

Mix the chestnut cream with the cooled melted chocolate, then gently fold in the whipped cream to obtain a smooth mixture.

When the sponge cake comes out of the oven, flip it onto a clean kitchen towel, remove the paper, and gently roll it up with the towel. Let it cool.

Unroll the cooled sponge, spread the chestnut and white chocolate cream evenly, then roll it up again without the towel.

Chill the log in the refrigerator for at least 3 hours. Before serving, dust with icing sugar and decorate as desired.

- For a perfect roll without cracking, roll the sponge while still warm with the kitchen towel. Let it cool completely like this before filling.
- You can add a dash of rum or Grand Marnier to the cream for a more adult note.
- For festive decoration, use white chocolate shavings, crushed candied chestnuts, and mint leaves.
