Cook the potatoes with their skin in salted water for 15-20 minutes until tender but firm. Peel and slice into rounds.

In a pan, cook the bacon until crispy. Add the sliced onion and cook for 3-4 minutes until softened. Add the potato slices and lightly brown. Pepper, add thyme. Remove from heat and incorporate the cream.

Butter the bread slices on one side. On the unbuttered side of 4 slices, place a layer of filling then slices of reblochon (without the rind). Cover with the remaining slices (buttered side facing out).

In a pan: Brown 4-5 minutes per side over medium heat, pressing lightly. In the oven: Bake at 200°C for 10-12 minutes until cheese is well melted.

Serve immediately with pickles and green salad.
