In a non-stick pan, heat the oil over medium heat. Sauté the chopped onion for 3-4 minutes until translucent.

Add the sliced mushrooms and cook for 6-8 minutes, stirring regularly, until they release all their water and begin to brown.

Incorporate the diced chicken, season with salt, pepper and a pinch of grated nutmeg. Sauté for 2-3 more minutes then remove from heat.

In a large bowl, break the eggs and whisk vigorously until frothy.

Add the cream and milk while whisking continuously to obtain a homogeneous mixture.
