Bring a large pot of salted water to a boil. Add the rice and cook according to package instructions until al dente. Drain thoroughly and set aside in a large bowl.

Finely slice the onion and chop the garlic. Clean and slice the mushrooms. Cut the chicken into small cubes. In a large pan, heat the olive oil over medium heat. Sauté the onion and garlic until translucent.

Add the mushrooms and sauté until they release their water. Incorporate the chicken and brown for 5 to 7 minutes. Pour in the cream, season with salt, pepper and a pinch of nutmeg. Simmer for 2 minutes.

Preheat the oven to 190°C. In the bowl containing the rice, add the chicken-mushroom preparation and half of the grated cheese. Mix gently until homogeneous. Transfer to a buttered gratin dish. Sprinkle the remaining cheese on top.
